Vanilla Coconut Collagen Matcha Tea Latte

March 28, 2018 by BrookeWeiss

Happy beautiful Wednesday friends! After a night of horrible sleep (pregnancy insomnia is setting in) I was happy to get up to a day of sunshine and mid 50 degree weather! I am ready for maxi dresses, sunshine and warm weather! Who’s with me?

Does anyone else feel like Easter came incredibly fast? I still keep forgetting that it is this weekend. I offered to host my family over for Easter and quickly had to take back the invite because we won’t have any living room furniture! We bought a new couch which I am incredibly excited for, but it won’t be delivered until next week and someone is coming this week to pickup our old stuff. Sorry family, the Kiss household will have to host the next holiday.

If you are an Easter celebrator do you know what is on the menu? One of my favorite parts of all holidays is helping put together the menu of eats. If you need a little help or inspiration to keep this holiday healthy between the chocolate bunnies, peanut butter cups and jelly beans don’t worry, I got you covered!

Let’s start with some healthy and scrumptious apps that will put an extra spring in your step!

  • Greek Yogurt Caramel Apple Dip
  • Pineapple Guacamole
  • Mango Salsa
  • Holy Moly Guacamole
  • Dill Vegetable Dip
  • Special Ingredient Salsa

Easter yells spring and spring yells fresh salads!

  • Avocado Egg Salad
  • Chicken Zoodle Salad
  • Fresh Brussel Sprout Salad
  • Pear and Pomegranate Salad with Salmon and Lemon Vinaigrette
  • Shredded Brussels Sprouts and Spinach Salad with Avocado Dressing
  • Raw Beet & Apple Salad
  • Medley Tomato Salad
  • Asparagus and Fingerling Potato Salad
  • Summer Watermelon Fruit Salad
  • Kale Summer Salad
  • Cucumber Salad
  • Bacon Cucumber Tomato Avocado Salad with a Lime Dressing

Easter isn’t complete without a healthy sweet treat!

  • Carrot Cake Mug Cake
  • Chocolate Banana Bread
  • Cinnamon Maple Sugar Cookies
  • Crustless Caramel Apple Cheesecake
  • Salted Maple Banana and Blueberry Ice Cream
  • Paleo Strawberry Cheesecake with a Chocolate Drizzle
  • Vanilla Almond Butter Cake Cups
  • Chocolate Chip Cookies
  • Chocolate Chip Brownies
  • Almond Butter Chocolate Bites
  • Baked Cinnamon Apples

There you have it, almost 30 recipes to make this the most delicious Easter yet! When eating your Easter meal(s) keep in mind to load your plate with protein (Easter ham or turkey anyone?) and vegetables first and then go for the fun stuff!

The other day I switched my morning cup of joe out for this Vanilla Coconut Matcha Tea Latte and it did not dissapoint! This latte will be made over and over again in the Kiss household and you should make it too! I use (and love) Primal Kitchen Vanilla Coconut Collagen that I get from Thrive Market.
