Fresh Brussel Sprout Salad

Happy Monday! Today kicks off a great week because my husband and I leave for our vacation Thursday! I have a lot to get done beforehand, but it will be worth it as I am sitting on the beaching drinking virgin pina coladas come Thursday.

Today is also an exciting day because I am officially in my second trimester of my pregnancy. Only two more to go! Stay tuned to my instagram because each week I will be posting bump updates as I grow and experience new things. And later this week on the blog, I will be sharing a full recap of my first trimester so stay tuned for that too!

I was asked a question recently, “If I want to become healthier and lose weight, should I put more focus on my workouts or my nutrition?” I love that I was asked this question because more times than not I see people putting the majority of their time, energy and focus on their workouts and giving very little time and attention to their daily diet. If you are on a weight loss journey, in my opinion, paying attention to your diet, eating mostly whole nutrient dense foods, limiting processed foods and drinking plenty of water will greatly out weigh, have more results and be more sustainable in the long run than focusing on a rigid gym routine. Proper intake of the right nutrition is what controls body fat loss/gain. Weight training and working out helps control body composition. Proper nutrition and weight training are both very important to reaching any health goals. If you are new to whole foods eating and working out, take it slow and first start paying attention to what you are putting on your plate. Once you can become consistent with eating eating a lot veggies and lean protein while limiting processed foods, then start slowly integrating a workout routine.

Weight loss, changing body composition or just living a healthier life takes time, consistency and dedication to see results. If you don’t see results after the first 5 days, week or even month do not get discourage. It took me years to become in tune with my body and I am still a work in progress. As long as you are working hard to move forward, you are going in the right direction.

A few weeks I posted a photo of an epic sandwich I made and I had this brussel sprout salad as a side and no one cared about my sandwhich. Like, no one. They only wanted the recipe for this salad. So much for my epic sandwhich… anyways, I wanted to be sure to get this recipe to you all because it is quick and easy to put together and is the perfect side to any meal!


Fresh Brussel Sprout Salad

Serves: 6-8
Ingredients
  • 1 lb brussel sprouts, ends removed
  • 4 pieces of bacon, cooked and chopped
  • 2 green onions, chopped
  • ½ avocado, sliced
  • ⅓ cup cranberries
  • goat cheese
  • ¾ cup Green Goddess Primal Kitchen Dressing
Instructions
  1. Add the brussel sprouts of a food processor and pulse for 5-10 seconds. Transfer the shaved brussel sprouts to a large bowl.
  2. Add all of the other ingredients and gently toss. Cover and let set in the refrigerator for 30-60 minutes before serving.
  3. Enjoy!
