Lemon Blueberry Vanilla Collagen Protein Balls

Two of my favorite protein balls are my Protein Chocolate Chip and Blueberry Energy Balls and Lemon and Chia Seed Energy Balls. So I thought to myself, what will happen if I combined these two recipes? Well, I will tell you what happened. Magic. These Lemon Blueberry Vanilla Collagen Protein Balls are bomb and a must make! I love to keep protein packed snacks on hand and protein balls are so easy to make and store for a quick grab n go snack.

So, why should you have protein packed snacks on hand and make sure you are getting protein at every meal? Protein helps build and repair many tissues in our bodies like our bones and muscles. As you age, getting in enough protein is very important! Protein also supports our immune system, boost metabolism, balances hormones and keeps us fuller longer. Protein should be eaten throughout your entire day. Our bodies like and need a constant supply of protein so it’s best to spread it out throughout your meals during the day. However, having more protein earlier in the day will help control appetite throughout the rest of the day. So get in that protein packed breakfast!

Lemon Blueberry Vanilla Collagen Protein Balls

Recipe type: Snack
Serves: 14 balls
Ingredients
  • 1 cup cashew butter
  • ½ cup gluten free rolled oats
  • 2 tbsp chia seeds
  • 2 tbsb raw honey
  • 1 scoop vanilla collagen powder
  • zest of 1 lemon
  • ⅓ cup dried blueberries
Instructions
  1. With the dough blade inserted, add all ingredients except for the dried blueberries to a food processor and blend until everything is well combined. You may have to stop once to scrape down the sides.
  2. Remove the blade and fold in the dried blueberries.
  3. Using a cookie scoop, form the dough into balls. Keep refrigerated.
  4. Enjoy!
