Roasted Savory Pumpkin Seeds

Happy Halloween eve! If carving pumpkins is on your agenda tonight or tomorrow I’ve got the best recipe for all those pumpkin seeds. I’ll admit it, I’ve never made pumpkin seeds. Maybe it’s because I am not a huge pumpkin carving girl and it always just sounded like a lot of work, ha! You know me, I love SIMPLE. Well, it turns out making pumpkin seeds is relatively simple! I did end up carving a pumpkin this year so I decided to roast the seeds and I am glad I did because these things are amazing. I can’t stop snacking on them.

Once baby A is older and able to carve a pumpkin I am sure pumpkin carving will be an annual thing for us which means more pumpkin seeds! Here’s the thing, you can season your pumpkin seeds anyway you’d like. I like savory foods over sweets so I went that direction. But, feel free to toss them with a little cinnamon and coconut sugar if you are wanting more of a sweet treat. This method of roasting worked really well. Some recipes will say that you need to soak and boil the seeds before roasting them. Well, I don’t have time for that so I skipped those steps and they turned out perfectly crispy! So don’t waist your time soaking and boiling the seeds. Whip these up for when you are handing out Halloween candy to all the kiddos or for a crispy yummy snack!

Before I go, how cute is our little monkey!? We celebrated Halloween over the weekend with my family and Avri was a monkey. 🙂


Roasted Savory Pumpkin Seeds

Ingredients
  • 2 cups pumpkin seeds
  • 3 tbsp coconut oil, melted
  • 1 tsp sea salt
  • ½ tsp pepper
  • ½ tsp garlic powder
Instructions
  1. Preheat the oven to 250 degrees and line a baking sheet with tinfoil.
  2. If you haven't yet, scoop out the seeds and separate them from the pumpkin pulp. Place the seeds in a large bowl and rinse with cold water cleaning away all the pulp. Strain the water and pat the seeds dry. Add them to a large bowl.
  3. Add the coconut oil and seasoning to the bowl of seeds and mix until all the seeds are fully coated.
  4. Transfer the seeds to the baking sheet in an even layer. Place in oven for 45 minutes stirring occasionally.
  5. Increase the oven temperature to 325 degrees and cook for an additional 5-10 minutes or until the seeds are golden brown.
  6. Remove from oven and enjoy! Store in an airtight container.
