Shredded Chicken Tacos

Tacos are a staple meal in our household! I love having a few go to meals that are easy to make and the flavor can be changed up so the meal doesn’t get boring. There is about a million and one ways to make a taco so they make for a great weekly staple meal.

I love making beef tacos, chicken tacos, taco salads, stuffed beef taco peppers, taco casserole, sweet potato tacos, fish tacos and the list could go on and on!

I recently got my hands on some Siete Foods Grain Free Tortillas so making tacos immediately was a must. I loaded up on their cassava and almond flour tortillas and they did not disappoint! I can’t wait to get my hands on their cashew flour and cassava and chia tortillas! Siete Foods also has the best grain free chips plus a bunch of other Mexican style products. There products have the best ingredient lists and make clean eating easy, fun and delicious!

Ingredients
  • 2lbs boneless skinless chicken breast
  • 2 10oz cans diced tomatoes with green chilies, drained
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp ground cumin
  • juice of two limes
  • tortillas of choice
  • topping (optional): avocado, green onion, cilantro, salsa, tomato, hot sauce
Instructions
  1. Add the spices to a small bowl and mix well.
  2. Add the chicken breast to a crockpot and squeeze the juice over the chicken. Sprinkle the seasoning mixture so the chicken is fully coated. Pour the diced tomatoes with green chilies on top.
  3. Place the lid on the crockpot and cook on low for 8 hours.
  4. Using two forks, shred the chicken breasts and give it a good stir.
  5. Build your tacos and enjoy!
