BBQ Shredded Chicken in the Instant Pot OR Crockpot

Get ready for probably the most simple recipe yet! This BBQ shredded chicken only has two main ingredients and when thrown in an instant pot is ready in no time at all. Oh, and it taste really good too and is extremely versatile!

This chicken would be perfect to add to your weekly meal prep menu. Since it takes 2.5 seconds to throw together you can easily get this going in your instant pot or crockpot and prep other foods while it cooks. Over the weekend I shared a little behind the scenes of my weekly meal prep. I touched on the magic of learning how to multitask in the kitchen in order to get meal prep done in a timely manner. Well, this recipe is perfect for taking that first step of learning how to multitask while meal prepping! You can make your own BBQ sauce, but I took the quicker and more convenient route of buying my own. For any type of sauce, dressing, marinade or condiment I always use Primal Kitchen Foods. Ingredients
  • 2 lbs skinless boneless chicken breasts
  • 1 bottle Primal Kitchen Foods Classic BBQ Sauce
  • Salt
  • Optional toppings: green onion, cilantro
Instructions
  1. Place the chicken in the instant pot and sprinkle with salt. Cover the chicken with the BBQ sauce. Seal the lid of the instant pot and set to cook on the poultry setting for 12 minutes.
  2. Once the time is up, manually release the pressure by turning the valve on the instant pot from "sealed" to "venting". Remove the lid once all of the steam has been released.
  3. With two forks, shred the chicken. Eat as is, put over some rice, cauliflower mash or salad.
  4. Enjoy!
Notes
For the crock pot option: place the chicken in the crockpot, sprinkle with salt, cover with the BBQ Sauce, place the top on the crockpot and cook on low for 8 hours. Shred chicken with two forks and enjoy!
