Easy Tuna Salad

Happy Monday friends! I hope your week is kicking off to a great start! If it isn’t go make this incredible simple tuna salad. It will turn your day right around. If you haven’t noticed yet, I am not into time consuming or complicated meals. Nah. Most days I have limited time to make a meal and I don’t want to spend my days slaving away in the kitchen. Not only is this recipe crazy simple, it also involves no cooking. So don’t tell me you don’t know how or like cooking it because it ain’t going to work.

I have been making some sort of similar concoction to this salad for months so I finally decided to share it on the blog. That’s another awesome aspect to this salad. You can make it however you want. Not a tuna fan? That’s cool; it’s not for everyone. Use chicken or canned salmon instead. Thrive Market has this really good canned salmon that I can’t wait to try in this recipe.

While making this recipe I was thinking of a few other similar recipes I have made on the blog that I completely forgot about. I can’t wait to make these few recipes again. This week in Wisco is supposed to be incredibly hot and humid so turning on the oven just isn’t an option. I am thinking of whipping up my Paleo Chicken Salad for sure! I almost forgot! For any parents out there, Avri LOVED this tuna salad. I wasn’t expecting her to like it, but she devoured it. This would be a great family friendly meal for littles too!


Easy Tuna Salad

Recipe type: Entree
Ingredients
  • 3 6.4 ounce Albacore tune packets
  • 4 celery heats, ends removed and chopped
  • ⅓ cup baby dill pickles, chopped
  • ½ cup grape tomatoes, quartered
  • 1 green onion, chopped
  • 2 tbsp sunflower seeds
  • 1 cup paleo mayo
  • ¼ cup yellow mustard
  • salt and pepper to taste
  • Optional: butter lettuce, spring mix, spinach, kale, etc.
Instructions
  1. In a small bowl combine the mayo and mustard. Mix well and set aside.
  2. In a large bowl add all the remaining ingredients (except for the leafy greens). Pour the mayo mixture on top and mix well. Salt and pepper to taste.
  3. Add 2-3 handfuls of leafy greens to a bowl or plate. Add tuna salad on top and enjoy!
