Korean Beef over Cauliflower Rice

It’s the first week of March and it is -4 degrees outside. This is not okay! Where is the warm spring weather that is supposed to melt all of this dang snow we have? If you live in a warm climate, pray for me to survive the rest of this bizarre Wisconsin winter.

I am totally the person that could eat the same meal or foods over and over again. I love food and when I find easy and healthy meals that I like I just keep rotating them. Well, something happened last week that rarely happens. I got sick of the same ole same ole ground beef meals I’ve been making. I know, I was shocked too. I cook with ground beef at least twice a week and I was ready to change it up and this is how I got the inspiration for this recipe. It is crazy simple. It takes less than 30 minutes to make and was the perfect change in flavor that I was looking for. Next time, I am going to double the recipe for extra leftovers for lunch throughout the week. This Korean Beef over Cauliflower Rice will most likely be a new staple in our house considering I probably won’t get sick of it anytime soon.

Having variety in your diet is very important so you are consuming as many essential vitamins and minerals as possible and it is important to also eat seasonally. Seasonal fruits and vegetables are more nutritious for you, will taste better and won’t break the bank. I do a great job of getting a variety of proteins in my diet, however, I know I can do better in the produce department. What I have been doing lately is looking at the list of in-season produce in the free Grocery Shopping 101 ebook I created (scroll to the bottom of my homepage to get yours!) and buying 1-2 in-season fruits or vegetables each week I either have never had or haven’t eaten in awhile. It has forced me to get out of my comfort zone, become more adventurous and creative in the kitchen and has inspired some fun new recipes! Korean Beef over Cauliflower Rice

Serves: 3-4
Ingredients
  • 1lb grass fed ground beef
  • 3 garlic cloves, minced
  • 1 carrot, peeled and chopped into matchsticks
  • 1 zucchini, chopped into matchsticks
  • ⅓ cup coconut aminos
  • 3 tsp sesame oil
  • 1 tbsp pure maple syrup
  • 1-2 tbsp fresh ginger, grated
  • dash of red pepper flakes
  • dash of salt
  • 2-3 tsp sesame seeds
  • green onions for garnish
Instructions
  1. In a medium sized bowl mix together the coconut aminos, sesame oil, maple syrup, ginger, red pepper flakes and salt. Stir in the carrot and zucchini and set aside.
  2. Place a large skillet on the stove over high heat, Add the ground beef and garlic and brown until fully cooked. Drain the grease and place the beef back into the skillet and reduce the heat to medium low.
  3. Add the carrot and zucchini mixture to the beef and mix well. Cover and let simmer for 3-5 minutes. Remove the cover and add the sesame seeds and let cook for an additional 2-3 minutes uncovered.
  4. Serve over cooked rice or cauliflower rice with green onion sprinkled on top.
  5. Enjoy!
