Korean Beef over Cauliflower Rice

Ingredients
  • 1lb grass fed ground beef
  • 3 garlic cloves, minced
  • 1 carrot, peeled and chopped into matchsticks
  • 1 zucchini, chopped into matchsticks
  • ⅓ cup coconut aminos
  • 3 tsp sesame oil
  • 1 tbsp pure maple syrup
  • 1-2 tbsp fresh ginger, grated
  • dash of red pepper flakes
  • dash of salt
  • 2-3 tsp sesame seeds
  • green onions for garnish
Instructions
  1. In a medium sized bowl mix together the coconut aminos, sesame oil, maple syrup, ginger, red pepper flakes and salt. Stir in the carrot and zucchini and set aside.
  2. Place a large skillet on the stove over high heat, Add the ground beef and garlic and brown until fully cooked. Drain the grease and place the beef back into the skillet and reduce the heat to medium low.
  3. Add the carrot and zucchini mixture to the beef and mix well. Cover and let simmer for 3-5 minutes. Remove the cover and add the sesame seeds and let cook for an additional 2-3 minutes uncovered.
  4. Serve over cooked rice or cauliflower rice with green onion sprinkled on top.
  5. Enjoy!
