Winter Fruit Salad

If you are looking for an easy recipe for a quick delicious snack, I’ve got you covered! I finally pulled the plug and stopped buying fresh berries. They haven’t been in season since the summer and they are real expensive this time of year. Now I am venturing out into more in season produce to keep a variety of fruits and vegetables in our diet that aren’t breaking the bank each week. Buying in season fruits and vegetables not only saves you money, but they will taste better and more fresh.

Some of my favorite winter season fruits and vegetables are:

  • apples
  • avocado
  • beets
  • brussel sprouts
  • carrots
  • kale
  • pineapple
  • potatoes
  • sweet potatoes
  • squash

Eating a variety of fruits and vegetables has many health benefits, but I don’t need to tell you that. I will encourage you to eat in season produce year round, however. Our bodies require all kinds of vitamins and nutrients and those needs change from season to season. Seasonal produce will give our bodies the right nutrients are bodies need and crave from season to season.

The next time you are at the grocery store make sure and load up on winter fruits and vegetables. Venture out of your comfort zone and get creative by trying something new. This Winter Fruit Salad is great to prep and store in your refrigerator for a quick snack. Pair it with Greek yogurt, cottage cheese or some prosciutto for a delicious snack!


Winter Fruit Salad

Recipe type: Salad
Ingredients
  • 1 pineapple, peeled, cored and chopped
  • 2-3 kiwis, peeled and sliced
  • 5 clementines, peeled and divided
  • 2 bananas, peeled and sliced
  • ¼ cup slivered almonds
  • juice of half a lemon
  • 2-4 tsp maple syrup (more if you want it sweeter)
Instructions
  1. Add all ingredients to a large bowl and mix with a large bowl.
  2. Store in an airtight container in the refrigerator.
  3. Enjoy!
