Savory Breakfast Bowl

Happy Wednesday friends! This weather has had me down lately. I was so excited to be on maternity leave during the heart of fall, but we have been having the absolute worst fall weather. It is like Wisconsin decided to skip fall and go straight to winter. My mood and motivation can really depend on the weather sometimes and lately I really have been letting it affect me. Yesterday though, I made a decision to be happy anyways! Just because it has been cold, rainy and windy lately and there isn’t really an end in sight I am choosing to be happy anyways. Being happy is a choice. Just like being crabby, mad and unmotivated is a choice. You always have the choice to make it a great day or not.

Since being home I haven’t been in my typical routine which means I haven’t been setting my intentions for the day. So, yesterday I decided to change this and start setting my intentions for the day and being happy! And you know what, yesterday was a great day! I got a lot done while baby slept, I spent quality time with her, we got out of the house, I ate healthy and even got in some light movement and stretching. All this took was for me to start my day with the intention of being happy. Today, I had to stop and remind myself already that I choose to be happy over letting small things get under my skin. Once I reminded myself of this I had a mindset shift and today has been a great day so far!

Every day you wake up remember you have a choice to make. Are you going to choose to make it a great day or let the day run you? With my recent experience, life is a lot more fun when you decide to make it a great day!

This breakfast bowl is packed full of protein, vegetables and all the vitamins and minerals from whole foods. A quick tip, you can easily meal prep this for the week. Instead of making a single serve, triple or quadruple the recipe and portion out into containers to take with you on the road or to work.


Savory Breakfast Bowl

Recipe type: Breakfast
Serves: 1 bowl
Ingredients
  • 2 eggs
  • 2 pieces bacon, cut into pieces
  • 2 large handfuls fresh kale, chopped
  • 1 shallot, chopped
  • ½ yellow pepper, chopped
  • ¼ cup grape tomatoes, halved
  • ½-1 cup roasted sweet potatoes*
  • ½ - 1 tbsp coconut oil
  • salt and pepper to taste
Instructions
  1. Add a skillet to the stove over medium high heat and add the bacon. Cook until desired crispiness. Transfer to a paper towel and pat the grease.
  2. Add the kale to the pan with the bacon grease and cook until wilted. Transfer to your bowl.
  3. Add the coconut oil to the same pan (only if there isn't any bacon grease left) and add the shallot, pepper and grape tomatoes. Cook until tender. Transfer the cooked vegetables to your bowl.
  4. Add two eggs to the same pan (grease again if needed) and cook to medium. Add the eggs to your bowl.
  5. Add the roasted sweet potato and bacon pieces to your bowl.
  6. Enjoy!
Notes
*I used the roasted sweet potatoes I prepped for the week for this recipe. All you do is cube your sweet potato, toss with a little coconut oil or ghee, salt and pepper, and roast in the oven at 425 degrees for 30-40 minutes.
