Roasted Beet and Cauliflower Hummus

Happy Wednesday! I can’t believe almost two weeks of my maternity leave is almost gone. Only 10 more weeks to soak in constant baby snuggles, lounge in my PJs while working on the blog and nutrition coaching and having the freedom to do what I want! I keep telling me husband that I don’t want to go back to work, but I think he thinks I am joking. I am totally not joking…

Just being home this short while with Avri has really gotten me thinking about our future and how I want our lives to be. I have always dreamed and imagined being a mom-preneur. These past couple weeks I have gotten a taste of this and I am absolutely loving it! I get to be home with my daughter, create new recipes when time allows, create new content and focus on my nutrition coaching clients. It might not be glamorous or sound like anything special, but it is exactly where and what I want to be doing right now.  These next ten weeks will be focused on Avri, continuing to grow my website and nutrition coaching business and doing all the things I love. Can life honestly get any better than that?

Let me ask you, are you living your ideal life or at least working towards it? If you are, good for you and keep doing you! There is no better gift than freedom and living a life that fuels you from the inside out. Maybe you are like me and your ideal life is still in the future, but you are working towards making it a reality. Everyday, do something even if it is small to get you one step closer to living your dream life. It doesn’t have to be time consuming or elaborate. No, just focus on small daily steps and take it a day at a time. Don’t ever forget your dreams and keep them close to your heart. The more you want it, the more you will prioritize it and the sooner it will be your reality!

Chickpeas and I don’t mesh well, so hummus has never been something I could eat without feeling horrible. So instead, I decided to make a paleo friendly hummus so I no longer have to be left out on the hummus train! Make this hummus as a side to any meal or to bring to a football party this fall for a delicious appetizer with your favorite chips or fresh vegetables!


Roasted Beet and Cauliflower Hummus

Recipe type: Appetizer and Side Dish
Ingredients
  • 3 beets, peeled and chopped
  • 1 head cauliflower, chopped
  • 3 tbsp tahini
  • ⅓ cup extra virgin olive oil
  • juice of 1 lemon
  • 1 tsp thyme
  • 2 tsp rosemary
  • salt and pepper to taste
Instructions
  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Place the beets and cauliflower on the baking sheet. Roast for 35 minutes.
  2. Transfer the roasted beets and cauliflower to a food process and add the remaining ingredients.
  3. Pulse until all beets and cauliflower and pureed and no chunks remain. You may have to stop once or twice to scrape down the sides.
  4. Enjoy as a side to any meal, with your favorite chips or side of fresh vegetables!
