How to Build the Perfect Single Serve Breakfast Omelette

Today I am bringing you a recipe that can be completely customized to fit your own taste buds! I like to start my mornings off with a bunch of protein in the form of eggs with lots of vegetables. For work, I usually prep a large quiche that I can easily portion out and throw in a container and bring to work with me. Some weeks I don’t have time to prep my quiche, but I can still quickly whip up a single serve omelette (or scramble) and bring it to work. These are also great for weekends when I don’t want to put a lot of effort into breakfast.

It is incredibly easy to whip one of these up in 10 minutes or less and I am going to walk you through it!

Step 1: pick your protein (besides your eggs)

Options: bacon, pork sausage, ground turkey, chorizo, chicken, etc.

Step 2: choose your vegetables (I like to include 3-4 different vegetables)

Options: spinach, tomato, pepper, asparagus, zucchini, squash, potatoes, broccoli, onion, plantain, etc.

Step 3: choose your toppings (this is completely optional and most times I don’t have any toppings)

Options: cheese of choice (I love goat cheese), avocado, green onions, cilantro, etc.

Step 4: get to cooking! With a large skillet over medium heat on the stove add your protein first. I do this so the vegetables can cook in the fat juices of the protein.

Step 5: once there is enough fat in the pan add the vegetables, mix well and let cook for a couple minutes.

Step 6: add your whisked eggs, cover and let cook all the way through OR add your eggs and scramble everything together.

Step 7: transfer to a plate and add your toppings.

Step 8: stuff your face!

It is truly as simple as that. What makes it even EASIER is if you already have vegetables chopped, prepped and ready to just grab right out of the fridge. Omelettes and scrambles are a great way to get in a variety of vegetables that you may not eat regularly. Change up your vegetables and/or meat every so often and you won’t get bored with the same breakfast over and over. Plus, you will be fueling your body with healthy whole foods ingredients and eating all the colors of the rainbow!

Ingredients
  • 3 eggs
  • 2 pieces of bacon, chopped into small pieces
  • 1 shallot, peeled and finely chopped
  • 3 asparagus sprigs, chopped into small pieces
  • ¼ yellow squash, chopped into small pieces
  • 4 grape tomatoes, chopped into small pieces
  • 1 small handful fresh spinach
  • toppings: goat cheese and avocado
Instructions
  1. Place a large skillet on the stove over medium heat and add the bacon pieces. Once halfway cooked, add the shallot and stir and let cook for 1-2 minutes.
  2. Add the remaining vegetables and mix well and let cook for 3-5 minutes until spinach is fully wilted and cooked.
  3. Add the eggs to a small bowl and whisk. Evenly spread out the vegetables in the skillet and pour the whisked eggs on top. Cover and let cook for 2-3 minutes or until fully cooked through.
  4. Add toppings and enjoy!
