How to Build the Perfect Single Serve Breakfast Omelette

Ingredients
3 eggs
2 pieces of bacon, chopped into small pieces
1 shallot, peeled and finely chopped
3 asparagus sprigs, chopped into small pieces
¼ yellow squash, chopped into small pieces
4 grape tomatoes, chopped into small pieces
1 small handful fresh spinach
toppings: goat cheese and avocado
Instructions
Place a large skillet on the stove over medium heat and add the bacon pieces. Once halfway cooked, add the shallot and stir and let cook for 1-2 minutes.
Add the remaining vegetables and mix well and let cook for 3-5 minutes until spinach is fully wilted and cooked.
Add the eggs to a small bowl and whisk. Evenly spread out the vegetables in the skillet and pour the whisked eggs on top. Cover and let cook for 2-3 minutes or until fully cooked through.
Add toppings and enjoy!
