Breakfast Potato Hash

I hope all of you mommas and mommas to be had an amazing day celebrating your greatness yesterday with your family! I was able to spend time with my mom Saturday and Sunday and every time I am with my mom I am more and more excited to be a mom to our baby girl. If I am at least half the mom my mom is, I will be a great mother!

We spent the majority of the day at our family cabin yesterday and I didn’t have much time to meal prep. Luckily though, I did think ahead. I knew I wouldn’t have time to create a new recipe for the blog and meal prep my breakfast for the week, so I combined them and came out with this Breakfast Potato Hash! Tonight I will grill up a bunch of chicken for the week, chop my fruit and roast a pan of veggies to have on hand throughout the week. I know what I am making for dinner this week, too and will cook the dishes that will give us the most leftovers early in the week. Every weekend isn’t ideal for meal prepping, but it is still possible to make a weekly plan. Your plan can be created in the car while traveling just on your phone, you can quickly jot down your weekly menu while eating a meal, and I’ve even done it in the grocery store while shopping. There are many ways to successfully live a healthy lifestyle and I truly believe planning ahead is one of the most important ways to accomplish it.

It was probably a busy weekend for the most of you, but did you plan out how you are going to be successful this week? If you haven’t done this yet stop what you are doing and take just minutes to plan out your dinners for the week and keep them extremely simple. No need to be searching pinterest or digging through cook books for recipes. Save that for when you have more optimal time. For now, focus on creating simple meals composed of whole minimally processed foods. Start with what your protein will be, then your veggies and then a healthy carb and fat. I promise you, you can have a weekly dinner menu made in less than 5 minutes when keeping it simple!

Hashes are a great option when you don’t want to take a lot of time to make a meal, easy way to pack in a lot of veggies and awesome for when you don’t want to turn the oven on. And the best part, you can make a hash with just about anything! Have a bunch of random leftovers in the fridge? Throw them in a pan, add a couple eggs and you have yourself a delicious time saving hash! If you are like me and need to prep your breakfast weekly, this is a great way to make a lot of meals in a short amount of time!

Serves: 4
Ingredients
  • ½ lb Yukon gold potatoes, chopped into small pieces
  • ¼ lb bacon, chopped into small pieces
  • ½ red onion, chopped
  • 2 cup frozen spinach
  • 1 cup whole grape tomatoes
  • 4 eggs
  • ½ tsp garlic powder
  • salt and pepper to taste
Instructions
  1. Place a large skillet on the stove over medium high heat and add the bacon. Once the bacon starts to release grease, add the onion and mix well. Let cook until the onion starts to become translucent. Add the potatoes, garlic powder and salt and pepper and mix well. Let cook for 5-10 minutes stirring occasionally.
  2. Reduce the heat to low and add the spinach and grape tomatoes and mix well. Let cook until potatoes become desired tenderness.
  3. Add the eggs and leave over the low heat until the eggs become sunny side up.
  4. Enjoy!
