½ lb Yukon gold potatoes, chopped into small pieces
¼ lb bacon, chopped into small pieces
½ red onion, chopped
2 cup frozen spinach
1 cup whole grape tomatoes
4 eggs
½ tsp garlic powder
salt and pepper to taste
Instructions
Place a large skillet on the stove over medium high heat and add the bacon. Once the bacon starts to release grease, add the onion and mix well. Let cook until the onion starts to become translucent. Add the potatoes, garlic powder and salt and pepper and mix well. Let cook for 5-10 minutes stirring occasionally.
Reduce the heat to low and add the spinach and grape tomatoes and mix well. Let cook until potatoes become desired tenderness.
Add the eggs and leave over the low heat until the eggs become sunny side up.
