Recipe Re-Make: On the Go Paleo Blueberry Muffins

When I revamped my blog I compiled a list of recipes that I wanted to remake because the pictures are absolutely hideous. I started a food blog with absolutely no experience of taking photos, give me a break! My photos now aren’t all that stellar, but definitely better than back in 2014. Anywho, I finally decided to tackle that list and first ups were these On the Go Paleo Blueberry Muffins. This was the very first recipe I shared on Kiss by Brooke. Check it out for a good laugh! Like, why do I have a food photo in black and white? I made one minor adjustment to the recipe and instead of using fresh blueberries I used frozen mixed berries and they turned out perfectly! Feel free to change up the nuts and fruits you add to these muffins. They will be amazing either way!

Going back into the archives all the way to 2014 allowed me to do some reflection. Reflection on where my blog is today, where do I see it going, how far I have come and everything I have yet to do. When I first started this blog I had no idea what I wanted out of it, if anything at all. I just found a passion for healthy eating and wellness and wanted to show people that eating healthy doesn’t have to be hard. I have been running this blog for almost 4 years and I have published almost 350 recipes and informative articles and I am just now getting a better idea of the direction I want to take it and how I want to impact people for the better. At first, this was just a side hustle and I’d share maybe a recipe a week. I have grown that to consistently share two recipes a week plus a free workout. I have received my Precision Nutrition Level 1 certification and have started working with people one on one to transform their health. I have competed in a fitness competition and a handful of obstacle course races. I have taken my health and fitness to new levels and found a deep passion for helping people do the same. I have accomplished all of those things from just one day deciding to share a recipe. My, now business, might not be where I want it but I can guarantee you everyday I am getting closer. I am taking steps and actions in the right direction to use my passion to build my ideal life and I am grateful for taking the chance on me back in 2014.

If you’re career or life isn’t where you thought it would be at this point, don’t give up. Take any small step forward you can each day to make your dream life a reality. It will take time, hard work, frustrations and a lot of ups and downs. As I get closer to my ideal life, I can clearly see how all these additional hours of work (outside of my full time job) will be worth it. Make a batch of these muffins, take a deep breath and keeping moving forward. You got this!


Recipe Re-Make: On the Go Paleo Blueberry Muffins

Recipe type: Snack/Muffins
Serves: 8 muffins
Ingredients
  • ½ cup coconut flour
  • ¼ tsp baking soda
  • ½ tsp sea salt
  • 5 large eggs, whisked
  • ¼ cup melted coconut oil
  • ⅓ cup honey
  • 2 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • ½ cup fresh blueberries*
  • 1 cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees and line muffin tin with liners or grease with coconut oil.
  2. Combine the dry ingredients in bowl except for the berries and nuts and sift together.
  3. Combine the wet ingredients in separate bowl and mix well.
  4. Combine the wet and dry ingredients and mix until no clumps.
  5. Fold in berries and nuts.
  6. Add muffin mixture to muffin tins about ¾ full. Place in oven and bake for 22 minutes.
  7. Remove from oven and let cool.
  8. Enjoy!
