Recipe Re-Make: On the Go Paleo Blueberry Muffins

Serves: 8 muffins
- ½ cup coconut flour
- ¼ tsp baking soda
- ½ tsp sea salt
- 5 large eggs, whisked
- ¼ cup melted coconut oil
- ⅓ cup honey
- 2 tsp vanilla extract
- 2 tsp apple cider vinegar
- ½ cup fresh blueberries*
- 1 cup chopped walnuts
- Preheat oven to 350 degrees and line muffin tin with liners or grease with coconut oil.
- Combine the dry ingredients in bowl except for the berries and nuts and sift together.
- Combine the wet ingredients in separate bowl and mix well.
- Combine the wet and dry ingredients and mix until no clumps.
- Fold in berries and nuts.
- Add muffin mixture to muffin tins about ¾ full. Place in oven and bake for 22 minutes.
- Remove from oven and let cool.
- Enjoy!
