Strawberry Banana Overnight Oats

Tomorrow at this time I will be on an airplane with my feet kicked back in total vacation mode. I think one of the things I am looking forward to most is being completely cut off from real life. No phone calls, texts or emails. It will be pure bliss. I will still be posting on social media so you can find me there!

I still have about 600 things I need to do before leaving our house tomorrow morning at the butt crack of dawn. I have yet to pack, I was a genius and schedule a tax appointment tonight which I am not even close to being ready for and I have everything in between that needs to get done too. At least there is light at the end of the tunnel!

I have made overnight oats a time or two in the past, but I am all about them these days. I don’t generally have oats often and when I do I generally like them hot with fruit infused and melted peanut butter. These overnight oats completely changed my tune, though! They are so simple to make, you can make any variation and in the morning it is a simple grab n go breakfast. You can even meal prep a few of them at a time and each morning all you have to do is grab your mason jar out of the fridge and be on your way. Simple as that!

Strawberry Banana Overnight Oats

Recipe type: Breakfast
Serves: 1 serving
Ingredients
  • ½ cup gluten free rolled oats
  • 2 tps chia seeds
  • 1 scoop vanilla protein powder
  • ¾ cup nut milk of choice
  • 1 tbsp maple syrup
  • 1 tbsp nut butter of choice
  • 2 strawberries, stems removed and sliced
  • ½ banana, sliced
Instructions
  1. Add all ingredients to a mason jar. Secure the lid and shake vigorously. Place in refrigerator overnight.
  2. Enjoy!
