Steamed Green Beans in a Balsamic Reduction

Do you ever get in a slump for no reason? No matter what, you can’t seem to be in a happy joyful mood, your motivation lacks or you just don’t feel like your normal self? And then, all of a sudden something amazing happens and you immediately snap out of it? Truthfully, I have been going through quite the slump lately. My motivation in my workouts have been lacking, I can’t seem to find happiness in things I usually can and I simply just haven’t been feeling like myself. I have been pushing through and keeping up with my workouts and trying to reflect on certain situations as to why I can’t find the happiness in certain things like I used to. I know this is just life and there are ebbs and flows of happy times and times of struggle. But, it is what we do during these times that define us.

I have been reflecting a lot lately. What is happening in my life right now that is making me feel like this or what was happening months ago that led to this? I haven’t quite found the answer yet, but I am getting closer. Today is the first day in a long time that I felt more like my normal self in a long time. During my reflection I have realized that I have been letting other people set goals and expectations for me instead of pursuing my own goals and dreams. Since these aren’t my goals I want for myself, I started to lose myself and my own goals were pushed aside. I know what I need to do, though. I need to become clear on my vision and goals for the future. I have to put my energy towards designing a life that I know is right for me, no one else. We only get one chance at life and I will be the one declaring how I will live it. Something happened today, and it was absolutely amazing. This something is pulling me out of my slump and my future is becoming a lot more clear now. If you have ever gone through something similar or going through it now, hang in there. Spend time with yourself to find you and what is important to you to live a happy life.

I eat lots of veggies so sometimes it is nice to change them up! I could eat steamed green beans every night of the week and sometimes we do! I decided to add a bit of flavor to them and they were quite delicious. If you are looking to spice up your vegetable game, give these a try!


Steamed Green Beans in a Balsamic Reduction

Ingredients
  • 1 lb green beans
  • 1 cup balsamic vinegar
  • ½ tbsp honey
Instructions
  1. Place the green beans in your steamer basket with about 2-3 inches of water. Steam for 15-20 minutes or until desired softness. I like mine with a bit of a crunch so I steamed them for 15 minutes.
  2. Place a large skillet over the stove on medium heat. Add the balsamic vinegar and bring to a simmer. Once it begins to simmer add the honey and stir continuously for 15 minutes or until it reduces by half. The longer it simmers the thicker it will get. It should stick to the back of a spoon.
  3. Add the steamed green beans to the reduced balsamic vinegar and toss until fully coated.
  4. Enjoy!
