Peppermint and Coconut Chocolate Fudge

Another holiday inspired recipe coming at you and it is snowing out, what a perfect day! I was never big on fudge, but I couldn’t put this down! I eventually had to tell myself enough is enough and tucked it in the back of my freezer. Out of sight out of mind, right?

My husband’s family is HUGE on dessert. To give you a better idea, at all family and holiday parties there are more desserts on the table than normal food. I come from a family that enjoys more savory foods than sweet, so I was never a big dessert girl. In the earlier years of our relationship, my husband’s family thought I was the strangest person in the world for not eating dessert. I would try and fit in and bring a paleo dessert (so I could enjoy it too) to family functions and that was a big no no. They only like desserts that are extremely sweet and rich and piled high with frosting. I gave up on that pretty quickly after getting roasted for bringing a “bitter” dessert. But, I am going to test my luck again and bring this fudge to family Christmas. It is rich and chocolaty so hopefully at least someone will like. Wish me luck!

If you aren’t much of a baker but still want to contribute to your holiday parties this year, this is the recipe for you! No baking necessary! You simply melt the ingredients together, pour in a dish and freeze. After a few hours you have the perfect soft but firm fudge. Simple as that!


Peppermint and Coconut Chocolate Fudge

Serves: 20 squares
Ingredients
  • 1 can full fat coconut milk
  • 3 tbsp organic unsalted butter
  • 3 tbsp coconut oil
  • ½ tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 bags enjoy life chocolate chips
  • 2 tbsp unsweetened coconut flakes
Instructions
  1. Add the coconut milk, butter and coconut oil to a large sauce pan on the stove over medium heat. Stir continuously until fully melted.
  2. Add the chocolate chips and stir continuously until fully melted.
  3. Remove from heat and stir in vanilla and peppermint extract.
  4. Grease an 8x8 baking dish and add the chocolate mixture. Sprinkle with coconut flakes and place in the freezer for 2+ hours.
  5. Cut into squares and enjoy!
