Chipotle Meatballs

The day has finally come! I launched my new website! This project has been a long time coming and I am so excited to finally show you guys! I will just apologize now for all of the explanation points in the post. I put a lot of time and effort into this website and I couldn’t be more proud. A huge thank you goes out to my friend who helped me create this site. I had him on speed dial and he too put a lot of time and effort into launching my site.

I first launched my blog in 2014 on a free wordpress site. All I wanted to do at that point was share healthy paleo recipes. As the years went by, my nutrition began to evolve and I grew a larger passion for health and fitness. It was time to take the next step forward in my blogging journey and launch a new site with a new look, logo, feel and services.

Don’t worry, you will still get two new recipes a week if that is all you come here for! But, take a peak around because I have a lot of new things on my site and will be sharing new and different content along with recipes. Some of the changes you will see are:

  • Work with me! I am currently taking online one on one nutrition coaching clients and I will be running an 8 Week Ignite Your Health Challenge to help people stay healthy through the holidays. Check out both of those here.
  • Recipe of the Month. I will be highlighting the most popular recipe each month and keeping it on the home page for easy access to you. This months Recipe of the Month is Chicken Fried Rice.
  • Client in the Spotlight. I will be sharing some of my client progress as they embark in their health journey’s.
  • Lifestyle. I don’t believe in diets. I believe in living a healthy lifestyle by creating healthy habits to create a healthy life for the rest of your life. I will be sharing lifestyle hacks and tips I have found helpful throughout my years of experience.
  • More content! Stay posted for not only recipes but articles all about fitness, nutrition and healthy living.
  • What I’m into Right Now. I am always trying new things to make my life easier and I want to share those things with you. At the bottom of the home page, you will see what I am currently into that is making living a healthy lifestyle so much easier!
  • You can now save or print the recipes with one easy click!

I hope you love the changes as much as I do! I am here to serve you and want to make this a place you can come to to easily learn how to better live a sustainable healthy life.

Now about these meatballs! I am always racking my brain for snack ideas. I tend to stick to the same snack day after day and I was looking to switch it up. These meatballs would be perfect to grab for a quick healthy snack or would be great on top of some spaghetti squash or gluten free noodle.


Chipotle Meatballs

Recipe type: Appetizer/Snack
Serves: 18 meatballs
Ingredients
  • 1 lb ground grass fed beef
  • 1 egg
  • ¼ cup almond meal
  • 1 small yellow onion
  • 1 red bell pepper
  • juice of 1 lime
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp paprika
  • ¼ tsp oregano
  • ⅛ tsp black pepper
  • ⅛ tsp sea salt
  • ⅛ tsp cayenne pepper
  • ⅛ tsp cumin
Instructions
  1. Preheat oven to 400 degrees.
  2. In a food processor, add the onion and red bell pepper and pulse until finely chopped. Only a few seconds.
  3. Add the ground beef, onion and bell pepper, almond meal, egg and seasoning to a large bowl. Using a large spoon or your hands mix until well combined. Form into balls using a cookie scoop and place on a baking sheet. Bake for 25 minutes.
  4. Enjoy!

      Hi Tanya – you can enter the ingredients into your food tracker that you use and create a recipe and it will give you the macros. I hope you like them!
