In a food processor, add the onion and red bell pepper and pulse until finely chopped. Only a few seconds.
Add the ground beef, onion and bell pepper, almond meal, egg and seasoning to a large bowl. Using a large spoon or your hands mix until well combined. Form into balls using a cookie scoop and place on a baking sheet. Bake for 25 minutes.
