Fire Roasted Tomato Basil Chicken

As I write this recipe up for you guys I am stuffing my face with this Fire Roasted Tomato Basil Chicken. I used to squirm at the sight of tomatoes and the only way I would eat them would be in the form of pizza sauce. Over five years ago when I decided to go paleo I also decided to venture out and try new foods or incorporate foods that I seldom ate for various reasons. It turns out, tomatoes are really good and I love them cooked. I have found other whole foods throughout the years that I really like cooked differently or paired with certain things.

Eating a whole foods diet can be intimidating or a turn off to people because the amount of food variety can be overwhelming. Like, did you know there are 17 different types of sweet potatoes? A lot of times people go into thinking they need to make extravagant meals with foods they’ve never heard of. Eating a nutrient dense whole foods diet doesn’t have to be fancy. Leave the Lambe Tinge recipe for when you are ready to venture out and try something a bit more complex. Otherwise, keep it simple silly! You can make a delicious chicken dinner without needing 16 different ingredients. You can make vegetables that taste good just by cooking them slightly different or adding your favorite seasoning. You can grocery shop without having to go to 4 different grocery stores. You can do a weekly meal prep without having to spend multiple hours in the kitchen on a Sunday. All you have to do is keep it simple.

Speaking of keeping things simple, this dish is so incredibly easy to throw together. We eat a lot of chicken in our household so it is nice to change up the flavor every so often. It only takes three main ingredients and less than an hour to make. I enjoyed mine over white rice with a side of vegetables. This would also be really great over spaghetti squash or gluten free pasta!


Fire Roasted Tomato Basil Chicken

Serves: 4-6
Ingredients
  • 2lb boneless skinless chicken breasts
  • 2 tbsp ghee
  • 1 28 ounce can fire roasted tomatoes
  • ½ cup fresh basil, chopped
  • salt, pepper and garlic salt to taste
Instructions
  1. Preheat oven to 425 degrees and place a large cast iron skillet on the stove over medium high heat and add the ghee.
  2. Season chicken breasts with salt, pepper and garlic salt. When skillet is hot add the chicken. Let cook for 4-6 minutes then flip and let cook for an additional 4-6 minutes. The outsides should become golden brown and a little crispy.
  3. Remove skillet from heat and add the fire roasted tomatoes and fresh basil. Transfer to the oven and let cook for 20 minutes.
  4. Enjoy!
