Preheat oven to 425 degrees and place a large cast iron skillet on the stove over medium high heat and add the ghee.
Season chicken breasts with salt, pepper and garlic salt. When skillet is hot add the chicken. Let cook for 4-6 minutes then flip and let cook for an additional 4-6 minutes. The outsides should become golden brown and a little crispy.
Remove skillet from heat and add the fire roasted tomatoes and fresh basil. Transfer to the oven and let cook for 20 minutes.
