Banana Chocolate Chip Muffins

Banana Chip Muffins

Summer is just about here which means just about every weekend we have something going on. Between working for two music festivals, planning our wedding and still trying to have a life, this is going to be an extremely busy summer! Saturday this weekend was a pretty awesome day! Nick and I headed to Minneapolis to watch the Central CrossFit Regionals and there were some pretty big names there so that was really cool. It’s funny, to Nick and I these people are like celebrities and we get all excited seeing them in person!

Famous of all famous in the CrossFit community, Rich Froning was there!! He has won the title of the “Fittest Man on Earth” four years in a row. After the 2014 CrossFit Games he announced that he would be retiring as an individual competitor. This year, he competed in a team and we got the pleasure of watching him compete! I felt like a little giddy girl seeing him in person! His team, CrossFit Mayhem Freedom, did amazing of course and they will be competing in the 2015 CrossFit Games.

I like watching the individual girls compete because come on, they are BAD ASS. I was excited to see Julie Foucher and Stacie Tovar. Again, I’ve only seen these people on T.V. and never thought I’d see them compete in person. Stacie made it in the top five so she will be moving on to compete in the Games but Julie ended up tearing her achilles  tendon in event 4 and finished 8th overall. Only the top five from each region make it to the Games. Julie was such an inspiration to see. In event 5 she came out with a full compression boot and finished the entire workout. It was a 250 foot handstand walk and snatches. She had the best looking handstand walk and was able to finish under the time cap. Head over to my Facebook page to see a video of it. Event 6 she did really well, too! It consisted of rowing, pull-ups and deficit handstand push-ups. It was incredibile to see her handle her injury with such grace and to continue on her regional journey. Even though she will not be competing in the Games, she made history in the CrossFit community (and I got to see it!!).

These muffins didn’t last long in our house. I used them either as a pre or post workout snack. They should turn out dense and moist because of the banana.

Banana Chocolate Chip Muffins

Recipe type: Breakfast/Snack
Serves: 12
Ingredients
  • 2 bananas, mashed
  • 2 tbsp raw organic honey
  • 1 egg
  • ⅓ cup melted grassfed butter
  • 1 tsp vanilla
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 cups almond flour/meal
  • ½ cup Enjoy Life Chocolate Chips
Instructions
  1. Preheat oven to 375 degrees.
  2. With a hand mixer, mix together all the wet ingredients (bananas, honey, egg, butter, vanilla).
  3. Add in dry ingredients (baking soda, baking powder, salt, almond flour) and mix with hand mix.
  4. Fold in chocolate chips.
  5. Line your muffin tin and fill each cup with batter. I filled them just about to the top.
  6. Bake for 20-22 minutes
  7. Let fully cool and enjoy!
