Brussel Sprout and Cranberry Hash with Chicken

You know what the world could use more of? The world could use more happiness to those who are succeeding, following their passion, hustling after their goals and creating an amazing life for themselves. I hear and see it all too often. People get “annoyed” with other people’s happiness and success. But, why?

There are many people in this world working their tails off to do good things, make a difference, inspire others and so many other amazing things. These people also receive a lot of flack and negativity from others. It could be jealousy. It could be comparison. If it’s jealousy, why be jealous? Instead of being jealous, show gratitude towards that person for being an inspiration to you to go after your big dreams and goals. I used to be an extremely jealous person. I always wanted what other people had and the grass always looked greener on the other side. Once I was able to recognize why I was jealous I was able to change my mindset and look at those people for inspiration and to push myself to do the things I always wanted to do. Nothing good comes from jealousy and the sooner we can recognize it, the sooner we can change our mindset and the sooner we become happier for others and ourselves.

Comparison is the thief of joy. As simple as that saying is, it is the honest truth. I have been guilty of it and sometimes still am. I have compared my chapter 5 to someone’s chapter 20 and beat myself up about it. Just like jealousy, when I am able to recognize the reason I am comparing myself to others I can shift my mindset and use it as motivation to keep going after my goals. I might not have the abs of someone I see on instagram but I also don’t have the same journey as that person. I don’t know what she is doing or how long she has been doing it. So instead, I use other people’s success to drive me and push me to be better and reach my own goals. If I let someone’s instagram highlight reel fester on my mind the more jealous I become and the more I compare myself to it. So instead, I love up on that person and show genuine happiness towards them and their hard work and then I get to work on myself. I have experienced it first hand, the more we can be truly happy for other people’s successes, the happier we can be ourselves.

It is officially November and we only have two months of the year left, holy smokes! I love this time of year. The weather is changing, the holidays are fast approaching and it is time to cook up some festive dishes! Cranberries are finally on the grocery store shelves so I stocked up the other day. Cranberries add just the perfect amount of sweet and tart to a dish and I love cooking with them!


Brussel Sprout and Cranberry Hash with Chicken

Serves: 4-6
Ingredients
  • 1 lb ground chicken
  • 2 tbsp ghee or coconut oil
  • 1 medium white sweet potato, diced
  • 2 cups brussel sprouts, shredded
  • 1 cup fresh cranberries
  • 1 yellow onion, chopped
  • 1 tsp garlic powder
  • 1 tsp dried sage
  • salt and pepper to taste
Instructions
  1. Place a large skillet on the stove over medium high heat. Add the onion and cook until translucent. Add the white sweet potato and cook for 10-12 minutes, stirring occasionally.
  2. While the potatoes are cooking, add the brussel sprouts to a food processor and pulse for 3-5 seconds to shred. Set aside.
  3. Add the ground chicken to the onion and potato mixture and brown until fully cooked. Add the spices and brussel sprouts and cook for another 3-5 minutes.
  4. Mix in the cranberries and cook for an additional 2-3 minutes.
  5. Enjoy!
Notes
Top with a couple eggs for a savory breakfast or serve as is for a quick nightly dinner!
