Brussel Sprout and Cranberry Hash with Chicken

Serves: 4-6
Ingredients
  • 1 lb ground chicken
  • 2 tbsp ghee or coconut oil
  • 1 medium white sweet potato, diced
  • 2 cups brussel sprouts, shredded
  • 1 cup fresh cranberries
  • 1 yellow onion, chopped
  • 1 tsp garlic powder
  • 1 tsp dried sage
  • salt and pepper to taste
Instructions
  1. Place a large skillet on the stove over medium high heat. Add the onion and cook until translucent. Add the white sweet potato and cook for 10-12 minutes, stirring occasionally.
  2. While the potatoes are cooking, add the brussel sprouts to a food processor and pulse for 3-5 seconds to shred. Set aside.
  3. Add the ground chicken to the onion and potato mixture and brown until fully cooked. Add the spices and brussel sprouts and cook for another 3-5 minutes.
  4. Mix in the cranberries and cook for an additional 2-3 minutes.
  5. Enjoy!
Notes
Top with a couple eggs for a savory breakfast or serve as is for a quick nightly dinner!
