No-Bake Oreo Dessert

A quick disclaimer on this recipe: this is still a dessert that contains sugar and should be eaten in moderation. Just because I use organic oreos doesn’t mean it is okay to eat this all in one sitting, even though I know some of us could! A sweet treat is still a sweet treat even if healthier ingredients are used.

Anyways, my husband and his entire family are dessert people. Not the type of people that occasionally enjoys a sweet treat after dinner type of dessert people. I mean, the type of dessert people where there are more desserts than regular food at family get together, always a dessert (or 3) on their kitchen counters and yes, we will see the dessert menu type of people. I’m not saying this is bad. I’m just not a dessert person. Besides ice cream, sweets don’t do much for me. Before meeting my husband, I didn’t know these type of people existed…

Back in the day, my husband would buy those boxed desserts where you add one or two ingredients and viola you have a cake or brownies. The only one he would ever make was the Jello No-Bake Oreo Dessert and I swear he would make it on a weekly basis. The older we got, the more aware of nutrition and how bad processed foods are for you he slowly cut back on his famous No-Bake Oreo dessert. To this day, he will still mention how much he loved that dessert. Well, it’s his birthday this week so I surprised him with his most favorite dessert! I have a feeling I will making this dessert a lot more often than just his birthday because he loved it. He even said it tasted like the real deal! So, if you have a special occasion coming up and need to make a dessert, whip this up!


No-Bake Oreo Dessert

Serves: 8-10
Ingredients
  • 1 can full fat coconut milk, chilled
  • 1½ bags Annie's Organic Chocolate Grabbits
  • ½ cup organic grass fed butter, softened
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp xanthium gum
Instructions
  1. Add 1 bag of Annie's Organic Chocolate Grabbits to a gallon Ziploc bag and crush them using a rolling pin. Transfer the crushed grabbits to a bowl and add the butter. With a large spoon mix until the butter is fully combined. Transfer the grabbits mixture to an 8x8 baking dish and set aside.
  2. In a medium bowl add the coconut milk (entire can including the liquid), honey, vanilla extract and xanthium gum. Using a hand mixer, mix until coconut milk becomes thick (about 5-7 minutes). Transfer the coconut mixture to the 8x8 baking dish on top of the grabbits base.
  3. In the same Ziploc bag, crush the remaining grabbits. Add the crushed grabbits on top of the coconut layer and place in fridge for 2-4 hours. Keep refrigerated.
