Medley Tomato Salad

I can’t believe July 4th is already next week. The older I get the quicker time goes by and I know how cliché that sounds. When I was younger I would be so annoyed when adults would say that because all I wanted was to be an adult and do adult things but it seemed so far away. Now I am an adult, can hardly remember what I did yesterday or how old I am and wishing time would slow down. Karma maybe?

If you are anything like me then you are already thinking about the holiday weekend and what will be on the menu for any gathering. When planning out a holiday weekend menu I always follow the 80/20 rule. 80 percent of what I make will be clean whole food recipes and 20 percent will be fun foods like a sweet treat or chips and salsa. I believe in enjoying time with family and friends on holidays and mindfully filling our tanks with nutritious foods but also indulging in celebration foods. If your health goal is to general overall health then allow yourself some freedom this weekend. I’m not saying you should give yourself a free pass for the weekend, but instead, fill the majority of your day with whole foods and allow yourself a treat or two.

Medley Tomato Salad

Recipe type: Side Dish
Serves: 4
Ingredients
  • 2 cups medley cherry tomatoes, cut in half
  • 1 large cucumber, peeled and chopped
  • 2 cups broccoli florets, chopped into small pieces
  • 1 tbsp fresh parsley
  • 2 tbsp. extra virgin olive oil
  • juice of 1 lime
  • salt and pepper to taste
Instructions
  1. Add all ingredients to a large bowl and mix well.
  2. Place in refrigerator for 30 mins to an hour to cool and set.
  3. Enjoy!
