Medley Tomato Salad

Serves: 4
- 2 cups medley cherry tomatoes, cut in half
- 1 large cucumber, peeled and chopped
- 2 cups broccoli florets, chopped into small pieces
- 1 tbsp fresh parsley
- 2 tbsp. extra virgin olive oil
- juice of 1 lime
- salt and pepper to taste
- Add all ingredients to a large bowl and mix well.
- Place in refrigerator for 30 mins to an hour to cool and set.
