Italian Sausage Egg Muffins

Ingredients
  • 1 dozen eggs, whisked
  • 1 tbsp coconut oil
  • 1 lb ground Italian Sausage
  • 1 cup mushrooms, chopped into small pieces
  • 1 cup zucchini, chopped into small pieces
  • ¼ cup green onions
  • ½ tsp salt
  • 1 tsp pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium skillet add coconut oil and melt over low/medium heat.
  3. Add the mushrooms, zucchini and green onion to pan and mix well. Let cook for about 5 minutes stirring often.
  4. Add the Italian sausage to the cooked veggies and cook until meat is cooked through.
  5. Add meat and veggie mixture to large bowl of whisked eggs.
  6. Add the salt and pepper and whisk together.
  7. Pour the egg mixture into a greased muffin tin. I used a glass measuring dish to easy pouring. Fill muffin cup about ½ - ¾ full.
  8. Cook for 30 minutes, let cool and remove from tin.
  9. Keep in fridge and you now have a grab and go breakfast for the week!
