Paleo Apple Cinnamon "Oatmeal"

Ingredients
  • 1 medium/large head of cauliflower, shredded
  • 1½ cups almond milk
  • 1 medium apple, chunked
  • 2 tsp cinnamon
  • 1-2 tblsp maple syrup (depending on how sweet you want it)
  • 4 eggs, whisked
Instructions
  1. Place a large pot over medium heat and add the almond milk.
  2. Cut the head of cauliflower into florets and use the shredding attachment of your food processor and shred.
  3. Cut apple into bite sized chunks.
  4. Once the milk is simmering, add the apple and shredded cauliflower and stir well. Let simmer for 5 minutes.
  5. Add cinnamon and maple syrup and stir well and let simmer for another 5 minutes. If you notice excess liquid, dump it out before adding the spices. This will depend on the size of your head of cauliflower.
  6. Turn the heat off and add the whisked eggs, stir well. Let sit for 3-5 minutes for eggs to cook.
  7. Optional toppings: chocolate chips, additional cinnamon and maple syrup, full fat coconut milk, fruit.
  8. Enjoy!
