Ingredients
  • 1 head cauliflower
  • Juice from 1 lime
  • Handful of finely chopped cilantro
  • 2 tbsp coconut oil
  • ⅓ cup water
  • Salt and pepper to taste
Instructions
  1. With the shredding tool on your food processor, shred the cauliflower florets.
  2. Heat the coconut oil in a medium saucepan over medium heat. Add the cauliflower rice and cook and stir for about 1 minute.
  3. Add the water and stir. Cover and cook for 5-10 minutes stirring occasionally.
  4. Add cilantro and salt and pepper and mix well. Cook for 5 more minutes uncovered stirring occasionally.
  5. Enjoy!
