Cauliflower Rice

Serves: 2-4
- 1 head cauliflower
- Juice from 1 lime
- Handful of finely chopped cilantro
- 2 tbsp coconut oil
- ⅓ cup water
- Salt and pepper to taste
- With the shredding tool on your food processor, shred the cauliflower florets.
- Heat the coconut oil in a medium saucepan over medium heat. Add the cauliflower rice and cook and stir for about 1 minute.
- Add the water and stir. Cover and cook for 5-10 minutes stirring occasionally.
- Add cilantro and salt and pepper and mix well. Cook for 5 more minutes uncovered stirring occasionally.
- Enjoy!
