Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Add the cauliflower and garlic to the pan. Drizzle with avocado oil and generously season with salt and pepper. Toss until fully coated. Place in oven for 40 minutes tossing halfway through.
Remove the roasted cauliflower and garlic from the oven and transfer to a food processor. Add the olive oil, tahini and lemon juice. Pulse until smooth. Taste and add additional seasoning if desired.
Enjoy with fresh chopped vegetables, crackers, chips or a side to any meal!
