Add the shredded carrots and pepper to a large bowl. Set aside. Core and quarter the green apples and add chunks to a food processor. Pulse until finely chopped. Do not over pulse (only 5-10 seconds). Add the apple to the large bowl. squeeze the lemon juice over the apple slaw and mix.
In a small bowl add the mayo, balsamic vinegar, maple syrup (or honey) and salt and pepper. Mix until smooth. Taste the dressing and either add more sweetener or vinegar depending on how you like it. Pour the dressing over the slaw and mix well.
