Place a cast iron skillet on the stove over medium high heat and add the bacon. While the bacon is cooking, add the eggs, seasonings and pizza sauce to a large bowl and whisk. Set aside.
When the bacon is fully cooked transfer it to a plate lined with paper towel and dab the excess grease. Leave as much bacon grease in the pan as you can.
Add the peppers and mushrooms to the cast iron skillet and let cook for 3-5 minutes. Stir in the kale and when it starts to wilt add the green onion, tomatoes and cooked bacon and cook for 2-3 minutes. Add mixture to the bowl of eggs and mix well. Transfer egg mixture back into the cast iron skillet.*
Place 10-12 (or more) pepperonis on top and place in oven for 50 minutes.
Remove from oven and enjoy!
Notes
*If there is no longer any bacon grease in the cast iron skillet grease it with oil of choice before adding in the egg mixture.
