Sweet Potato and Kale Fritters

Serves: 15 fritters
Ingredients
  • 4 cups sweet potato, finely shredded (about 4 small sweet potatoes)
  • 2 cups kale, chopped
  • 4 eggs
  • ¼ cup avocado or extra virgin olive oil
  • ¼ cup cassava flour
  • 1 tsp salt
Instructions
  1. Add all the ingredients to a large bowl and mix well.
  2. Heat and grease an electric griddle pan to 375 degrees or a large skillet on the stove over medium high heat.
  3. Using a ⅓ measuring cup add fritter mixture to hot pan creating 15 round fritters. Gently flatten keeping each fritter about ¼ inch thick. Cook for about 4 minutes each side. Cook in batches if needed.
