Add a large saute pan on the stove over high heat and add the sausage. Brown until fully cooked. Remove the meat and grease from the pan and set aside.
In the same pan, reduce the heat to medium high and add the coconut oil. Once melted add the sweet potato. Cook for 3-5 minutes or until the sweet potato becomes soft
Mix in the pepper and onion and cook until soft, 3-5 minutes. Add the kale and cook until wilted, 1-2 minutes. Add the sausage back in and mix well.
Remove from heat, dish up, add your toppings of choice and enjoy!
