Preheat the oven to 350 degrees and line a loaf pan with parchment paper.
Add the apple and zucchini to a food processor and pulse until fully shredded (5-10 seconds). Set aside.
Add the bananas to a medium sized bowl and mash with a fork. Add the eggs. coconut oil and vanilla extract and mix well. Add the coconut and tapioca flour, ¼ cup coconut sugar, 2 tsp cinnamon, baking powder and salt. Mix well. Fold in the shredded apple and zucchini. Pour the mixture into the loaf pan and evenly distribute.
Mix the remaining tbsp coconut sugar and 1 tsp cinnamon to a small bowl and mix. Sprinkle evenly over the dough.
Place in oven and bake for 45-50 minutes or until a toothpick comes out clean.
