Sweet Potato Banana Bread

Ingredients
  • 2 ripe bananas
  • 1 cup roasted sweet potato, removed from skin
  • 1 cup cassava flour
  • 1 egg
  • ¼ cup honey
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • ¼ tsp salt
Instructions
  1. Preheat the oven the 350 degrees and line a loaf pan with parchment paper.
  2. Add the bananas and sweet potato to a large bowl and with a fork mash them together. Feel free to leave some banana chunks.
  3. Add egg, honey, coconut oil and vanilla to the sweet potato mixture and whisk together. Add the cassava flour, cinnamon, baking powder and salt and whisk until fully combined.
  4. Pour the sweet potato mixture into the loaf pan and evenly distribute. Hit the pan on the counter a few times to even out.
  5. Place in over for 35 minutes or until a toothpick comes out clean.
  6. Let cool and enjoy!
