Notes
For the frozen sweet potato, peel and cut the potato in small chunks. Boil the potato on the stove until soft. Drain the water and lay the potato chunks out on a cutting board or plate and let cool and dry. Place in zippy bags and pop in the freezer. This can be done a day or two in advance.
