Cut the sweet potatoes in half and then cut them in half again, but length wise.
Place a large pot on the stove and add the chopped sweet potato. Cover with water and bring to a boil. Let boil 15 minutes or until fork tender. Drain the water.
Preheat oven to 425 degrees and place the boiled sweet potato on a baking sheet skin side down. Using the bottom of a glass, gently smash each sweet potato. Drizzle with coconut oil and season with salt, pepper and dried dill. Place in oven for 25-30 minutes.
