Cut the avocados in half, remove the pit and scoop the insides out into a bowl. Using a fork smash the avocados. Add the minced garlic and juice of one lime and mix well. Set aside.
Add the tomatoes, jalapeno pepper, yellow and green pepper, and red onion to a large food processor. Blend for 10-15 seconds making sure there are still some chunks. You do NOT want to liquefy it! Transfer the salsa mixture to a large bowl and add the juice of the remaining lime, guacamole mixture, and salt and pepper. Mix well. Taste and add additional salt and pepper if needed.
Enjoy with veggies, chips, on a salad or burger!
