Peanut Butter Cup Ice Cream + Healthy Holiday Indulgences

Ingredients
  • 1 can full fat coconut milk
  • 2 tbsp honey
  • 4 tbsp peanut butter (or almond butter)
  • 2 tsp vanilla extract
  • 6-8 Justin's Peanut Butter Cups (or almond butter)
Instructions
  1. Add the coconut milk, honey, peanut butter and vanilla extract to a high powered blender or food processor and blend until smooth.
  2. Follow the direction on your ice cream maker and add the ice cream mixture to the ice cream maker. Let churn 10-15 minutes.
  3. While the ice cream is churning, place the peanut butter cups on parchment paper. Place another piece of parchment paper on top of the peanut butter cups. Using a large spoon, your hands or rolling pin crush and crumble the peanut butter cups.
  4. Once the ice cream becomes a soft serve consistency add half of the crumbled peanut butter cups to the ice cream maker. Let the peanut butter cup crumbles blend into the ice cream.
  5. You can serve and eat the ice cream as a soft serve with the remaining peanut butter cup crumbles on top. Or, turn off the ice cream maker and transfer the ice cream to a bread pan, top with additional peanut butter cups and place in the freezer for 1-2 hours.
  6. If placed in the freezer, set the ice cream out on the counter 15 minutes before eating.
  7. Enjoy!
