Instructions
*Once your eggs are hard boiled and peeled roughly chop them and add to a bowl with the avocado and green onions. Mash together until there are no large clumps of avocado or pieces of egg. Salt and pepper to taste.
Serve on green leaf lettuce or gluten free bread and garnish with cherry tomatoes and additional green onions.

Notes
To harden my eggs I brought water to a boil in my steamer and steamed the eggs for 12 minutes covered. I immediately transferred them to water and ice for 5 minutes. Peel right away.
