Ingredients
  • 2 tbsp coconut flour
  • ¼ tsp baking soda
  • ⅛ tsp cinnamon
  • ⅛ tsp nutmeg
  • ¼ tsp vanilla extract
  • 1 tbsp tahini
  • 1 tbsp plain greek yogurt
  • 1 tbsp coconut oil, melted
  • 2 tbsp cashew milk or other nut milk
  • ½ tbsp maple syrup
  • 1 tbsp finely shredded carrots
  • 1 tbsp coconut butter
Instructions
  1. Add the coconut flour, baking soda, cinnamon and nutmeg to a small bowl and mix.
  2. Add the vanilla extract, tahini, greek yogurt, coconut oil, nut milk, maple syrup and carrots to the same bowl and mix until fully combined.
  3. Grease a small dish or mug and pour the batter into it. Place in microwave for 2 minutes increments.
  4. Add roughly 1 tbsp of coconut butter on top and enjoy!
