Pomegranate Banana Bread

Ingredients
  • 2 cups cassava flour
  • 3 bananas, mashed
  • 1 egg
  • ½ cup honey
  • ⅓ cup coconut oil, melted
  • ⅓ cup coconut milk or nut milk of choice
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • 1 cup pomegranate seeds
  • 1-2 tbsp organic powdered sugar
Instructions
  1. Preheat oven to 350 degrees and grease a loaf pan, set aside.
  2. Add the bananas, egg, honey, coconut oil, coconut milk and vanilla extract to a large bowl. Using a hand mixer, mix until smooth.
  3. Add the cassava flour, baking powder, cinnamon and sea salt to the same large bowl and mix again until smooth. Fold in the pomegranate seeds.
  4. Transfer the dough to the greased bread pan and spread evenly. Bake for 1 hour.
  5. Remove from oven and sprinkle with powdered sugar. Let cool for 30 minutes.
