Pomegranate Banana Bread

- 2 cups cassava flour
- 3 bananas, mashed
- 1 egg
- ½ cup honey
- ⅓ cup coconut oil, melted
- ⅓ cup coconut milk or nut milk of choice
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp sea salt
- 1 cup pomegranate seeds
- 1-2 tbsp organic powdered sugar
- Preheat oven to 350 degrees and grease a loaf pan, set aside.
- Add the bananas, egg, honey, coconut oil, coconut milk and vanilla extract to a large bowl. Using a hand mixer, mix until smooth.
- Add the cassava flour, baking powder, cinnamon and sea salt to the same large bowl and mix again until smooth. Fold in the pomegranate seeds.
- Transfer the dough to the greased bread pan and spread evenly. Bake for 1 hour.
- Remove from oven and sprinkle with powdered sugar. Let cool for 30 minutes.
