Garlic Herb Mashed Baby Red Potatoes

Ingredients
  • 3 lbs baby red potatoes
  • 6 tbsp organic unsalted butter
  • ⅓ cup plain Greek yogurt
  • ¼ cup full fat coconut milk*
  • 3 cloves garlic, minced
  • 2 tsp dried sage
  • 2 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 tsp sea salt
  • 1 tsp black pepper
Instructions
  1. Add the potatoes to a large pot and fully cover with water and add a dash of salt. Place on the stove over high heat and bring to a boil. Let boil for 15-20 minutes or until fork tender. Drain the water and transfer the potatoes to a large mixing bowl.
  2. Add the butter, Greek yogurt, coconut milk, garlic and spices and blend together using a hand-mixer.
  3. Enjoy!
Notes
*If your coconut milk separated into liquid and solid, mix it with a spoon first.
