Snickerdoodle Protein Mini Muffins

Ingredients
  • 1½ cup cashew butter
  • ⅔ cup rolled oats
  • 2 scoops vanilla grass fed whey protein powder
  • ½ cup coconut sugar
  • 2 tsp cinnamon
Instructions
  1. Preheat the oven to 350 degrees.
  2. Combine the coconut sugar and cinnamon in a small bowl. Set 2 tbsp aside.
  3. Add the cashew butter, rolled oats, protein powder, and remaning coconut sugar and cinnamon to a food processor. Pulse for 5-10 seconds until combined.
  4. Grease your mini muffin tin and add the dough. Sprinkle each muffin top with the 2 tbsp coconut and cinnamon sugar mixture. Place in oven and bake for 10 minutes.
  5. Enjoy!
